Seves is an exciting new project from Foulques and Marie, from an organically grown 63 Ares plot planted in 1980 at the top of Bouzeron. Slow pressing, native yeasts, a year in 228 and 400l barrels, then a few months in Inox. Theres a big focus on sustainability - bottles are reusable, wax and cork all locally sourced.
