Kaja Kohv of Racines Rebelles was introduced to us by Jonas Dostert, who works his vines just across the river. 
 
All Elbling, a slow ripening grape that held acidity well even in the heat of 2022. The destemmed grapes were left to ferment for 7 days untouched, then pressed and fermentaion finished in large barrels.
