Kaja Kohv of Racines Rebelles was introduced to us by Jonas Dostert, who works his vines just across the river. 
 
All Elbling, a slow ripening grape that held acidity well even in the heat of 2022. Its thin skins make it hard to work. Half fermened in steel and half in acacia, then left for 8 months untouched before a light filtration.
